Handily made with two tiers so you can eat the bottom layer leaving the top tier as a pretty standalone cake!

Can't decide between vanilla or chocolate cake? Why not have both with this Chocolate & Vanilla Vegan Marble Cake! Pretty, easy to make & sure to impress! All you need is a piping bag of each batter which you then Jackson Pollack into the tin and swirl together with a skewer or knife! Just fill with buttercream and/or jam plus some fresh fruit if you fancy it and you'll have a beautiful cake to share with friends. It definitely went down well when the Peachicks and I met up with some friends & their little people at the weekend!

Creamy Cheesy Vegan Potato & Kale Spring Salad, perfect way to banish those winter blues and full of immune boosting vitamins to keep the bugs away! This dish is freefrom most of the Top14 allergens as its freefrom dairy, eggs & soy as well as gluten (check cornichon ingredients) but noone will be able to tell the difference! This is a great stand alone salad that is delicious warm and even better cold the day after. It also makes a great side dish to your favourite grilled fish, meat or vegan alternative. The yoghurt dressing can be made in a big batch and kept for dunking veggies in for the rest of the week!

Light and fluffy, Vegan Cheese & Chive Scones. Dairyfree but full of flavour thanks to the vegan parmesan & fresh chives! Most people will be familiar with those sweet or fruit filled ones but have you ever tried a Savoury scone? Yum! These Vegan Cheese & Chive Scones are great with slow cooker stews or even better a nice hot bowl of my Creamy Vegan Butternut Squash Soup.

These Vegan Olive Tomato & Basil Swirls are full of lovely Mediterranean flavours and perfect to show off the fruity flavour of Olive Oil. They are dairyfree, suitable for vegans and easy to make gluten-free by using suitable puff pastry. Gluten free pastry is becoming more readily available in supermarkets but check the ingredients its not always soyfree or vegan.

This Vegan Vanilla Victoria Sponge is super easy to make. It's also light and fluffy but sturdy enough to filled & covered in fondant for special occasions! This recipe makes one 20cm cake which you can slice into 2 or 3 ready for filling with jam & buttercream. You can also easily vary the flavour of this basic sponge recipe by using nut milks or adding coffee, chocolate or citrus zests! It is dairyfree, eggfree, nutfree and easy to adapt to Glutenfree, by replacing the flour with the same quantity of Doves farm glutenfree flour.

Who doesn't love a good chocolate muffin, they are an easy to grab breakfast or mid-afternoon chocolate hit. But why settle for those dry, crumbly ones off the shelf, when you can so easily make your own! So here it is - my Essential Vegan Chocolate Muffins recipe! Soft, dark and gooey as well as dairyfree, eggfree, soyfree and vegan friendly (for all of you taking part in Veganuary!) What more do you need?! Cupboard to mouth in about 30minutes (less if you make mini ones!) And did I mention the coffee kick? It's just enough to enhance the chocolate flavour without overpowering it completely.
