GlutenFree Vegan Vanilla Almond Cookies

These little Healthy Cookie Dumplings are really cute, because the mixture doesn’t spread they keep their little dumpling shape and were named Cookie Dumplings by the Peachicks.  They are dairyfree, eggfree and glutenfree (contain oats) and are brilliant for lunchboxes and after gym snacks.  They are packed with nutrients, although I would recommend leaving the nuts out for school lunchboxes as a lot of schools have no nuts policies.  These would also be AMAZING with small apple chunks in it! These cookie dumplings are lovely and soft but full of yummy crunchy seeds and cashew nuts.  The great thing about these is that they are easy to make and infinitely adaptable – all you have to do is use your favourite seeds, nuts or dried fruits. Healthy Cookie Dumplings (dairyfree, eggfree, glutenfree)

This recipe has taken a few attempts to get it just right, making Biscotti without the eggs has proved a little tricky.  I still think there is a bit of work to fine tune it but these Cranberry, Hazelnut & Dark Chocolate Vegan Biscotti are really tasty and perfect with a nice strong coffee. If there are any left, these little Biscotti will store for a couple of weeks in an airtight container or make really pretty handmade gifts for all coffee lovers!  Anyone who followers either the Peachicks’ Bakery on Twitter and/or Instagram may have noticed I am a teeny-tiny bit of a coffee fan and so discovering that our local Starbucks stocks coconut milk was possibly one of the most exciting things to have happened in the last couple of weeks which I must admit have not been the best! Cranberry, Hazelnut & Dark Chocolate Vegan Biscotti

This Vegan Raspberry & Pomegranate Cheesecake is really lovely, the raspberry and pomegranate toppings work really well with the passionfruit in the yoghurt/cream cheese filling.  Use Glutenfree biscuits for the base for a completely Top14 free dessert!  Cheesecake has to be one of my favourite puddings, but obviously with an egg and dairy allergy is something that I have been wanting to find a suitable alternative for, for a while. Being able to find a suitable dairyfree cream cheese has been difficult as we also have soya allergy to contend with (Apparently Tesco & Bute Island are nice soya cream cheeses). I do love a good Christmas party especially one involving lots of glittery crafty things, Santa & yummy food!  Yes you guessed it, it was our Christmas party morning at work and a lovely morning was had by all!  I made these little lovelies to take along – they are gluten & nut free and suitable for vegans!  The key to these biscuits is the Sugar & Crumbs Christmas Punch icing sugar, I discovered it and other flavours at the Cake & Bake show and am a big fan.  Although I haven’t tried these biscuits as the icing sugar has orange in it I am informed they are very nice! Free from Christmas Spiced Biscuits!

Today is one of my favourite days of the Formula 1 calendar… The British Grand Prix!  So not a lot of baking going on you would think.  Well as we have finally got Madame Peachick into some sort of regular (ish) routine baking has again become possible! Unfortunately it looks as though the reason she was eating so much and sleeping so little was the formula top-up we were giving her before she went to bed.  It doesn’t look like she is particularly allergic to it but my ordinarily chirpy gingernut grows horns and becomes the devil child when she ingests cows milk either through my milk (caused probably by my current feta cheese & honey toast obsession) or Formula milk. British GP day!!

Its official I have finished work for the holidays and only have 4 weeks left until Maternity leave when I get back!  So the best way to start off the holidays is of course with a sickness bug… just me and the biggest peachick so not too bad!  Did manage to hold it together long enough on Saturday to go with the kids and in-laws to have a 4d scan of the Unhatched Peachick which was absolutely amazing and well worth every penny!  Although I have to admit that being scanned and kicked whilst trying not to throw up is interesting to say the least!  The newest addition to the family is (at 30 weeks) around 3lb 5oz already and looking a lot like its sister’s with pudgy little fingers, toes and cheeks! Chocolate & Cherry Flapjacks – Christmas Holibobs have arrived!!

Couldn’t resist getting the old china tea set out again! Its just so pretty! The jury is still out on the answer but whatever they are they taste good!  The idea with cookies is the large amount of butter and sugar in them makes them spread from a blob into a beautiful soft and chewy disc… These didn’t!  Unfortunately the downside to substituting butter in a cookie recipe is that the blobs don’t spread quite as much… Hmm on second thoughts is that really a downside?!  They become these lovely soft and chewy mounds almost a rock cake but thanks to the apple sauce these stay very moist!   (Ok I realise some of you will make beautiful rock cakes but I have grown up with rock cakes being a very good description of hard, dry lumps of ‘cake’ so I apologise if yours are in fact lovely!)
