This Vegan Vanilla Victoria Sponge is super easy to make. It's also light and fluffy but sturdy enough to filled & covered in fondant for special occasions! This recipe makes one 20cm cake which you can slice into 2 or 3 ready for filling with jam & buttercream. You can also easily vary the flavour of this basic sponge recipe by using nut milks or adding coffee, chocolate or citrus zests! It is dairyfree, eggfree, nutfree and easy to adapt to Glutenfree, by replacing the flour with the same quantity of Doves farm glutenfree flour.

These little Pretty Vegan Coffee Cupcakes are eggfree, soyafree & dairyfree and were a birthday present for The Peachicks’ Nanny whose birthday it also is today!   They would also be perfect for Mothers Day.  I have been meaning to make a dairy free, egg free coffee cake for a while but haven’t really got around to it on account of the Peachicks being such fans of the chocolate version. Pretty Vegan Coffee Cupcakes – Perfect for Mother’s Day Tea!



This weekend has been rather busy with a raft of special events to celebrate.  As such I’ve been so busy there isn’t really a lot to report!! We are in the middle of compiling the Peachicks’ favourite lunchbox staples which after what the postman brought this morning I’m hoping to finish soon!!  On the subject of school Alys has gone back to school into year 3/4, Millie started school today and Elodie is in the Toddler room at nursery now!  Plus Daddy Peacock & I have been married 5 years, my Grandparents have been married 60 years and one of the Peachicks’ grandparents had a special birthday last week too! A weekend of celebrations!


The biggest Peachick is 7 on Sunday and here is the cake she ordered!  Obviously I didn’t make Ariel, I found her at The Craft Company, along with the silicon mould for the sea creatures.  They had everything I needed which means I didn’t have to hand colour the fondant (well I did the ice-blue for the pearls & the clam) and delivered next day. The large clam was handmade from a sketch I made on a scrap of paper; it is hand coloured fondant shaped and left to dry on a whisk handle before the inside and pink pearl were added! Its all dairy/soya free; although I should point out the Betty Crocker buttercream contains no milk ingredients but they do give a warning on the packet that it may contain milk ingredients so use your own judgement when using. Mermaid Birthday Cake!




So I had my birthday a couple of weeks ago.  Having crossed to the otherside of the big 3-0 birthday I am loving my birthdays again (don’t ask about the 30th… it involved sickness bugs and general sulking!).  This year the plan was breakfast out followed by a picnic at the zoo… It was lovely, amazing breakfast and a lovely sunny but cold day wandering around Marwell!  But obviously all you lot want to know is what cake did I have (spot the ones who haven’t checked out the facebook page!!).  I had some pistachios, hazelnuts, dates and dark chocolate lying around the house and decided my present to myself would be to dispense with fondant – I HATE FONDANT!! Birthday cakes, eggs and a trip to the zoo!


My Star Wars Baby is 3!!  Yes I have decided that I will just have to embrace the fact that being born on 4th May she will forever be called a Star Wars baby!     Amelia ‘Millie’ Rose Peacock has the most severe of all the peachick allergies but I am pleased to report that in the last couple of months she has had her very first ‘normal’ custard at nursery, hot chocolate while out for coffee with Mummy AND most excitingly a Mr Whippy ice-cream on the beach!! I could actually have cried watching all that creamy milky gloop running down her hands and dripping onto her feet was just amazing…  She’s waited so long and been so patient with all the ‘experimenting’ with her diet, never complaining when she gets poorly eating something she is not quite ready for.  Don’t get too excited a small amount every […]

Ok so I’m about to stretch the description of this blog namely the bit about it being creating lovely recipes for the Peachicks…. This one is most definitely more for me but I reckon I should be forgiven for including it as technically it is a peachick that necessitated the making of it!!   The unhatched Peachick has finally reached the final stages of baking… 27weeks!!  In some books this is the beginning of the final trimester (not in all but we’ll ignore them!).  The end is in sight and I am getting a wee bit impatient – I want to know what colour the Peachick is… Is it another pink one or will Daddy Peacock finally get some back-up in this house from a little blue Peachick?? Happy Birthday Littlest Peachick!!   And here is a picture of her birthday cake its her favourite animal second only to piggies…. a turtle!   This cake has taken a while to make, its all dairy/soya free too!  The inside is a  chocolate cake with homemade blueberry sauce  and dark chocolate buttercream between the layers!     What do you think?! I quite like him actually…
