Who doesn't love a good chocolate muffin, they are an easy to grab breakfast or mid-afternoon chocolate hit. But why settle for those dry, crumbly ones off the shelf, when you can so easily make your own! So here it is - my Essential Vegan Chocolate Muffins recipe! Soft, dark and gooey as well as dairyfree, eggfree, soyfree and vegan friendly (for all of you taking part in Veganuary!) What more do you need?! Cupboard to mouth in about 30minutes (less if you make mini ones!) And did I mention the coffee kick? It's just enough to enhance the chocolate flavour without overpowering it completely.

School holidays are great for relaxed family breakfasts, definitely different from the flinging toast at the Peachicks as they get in the car that usually happens around here!  These Vegan Vanilla Pancakes are soyfree as well as containing no dairy or eggs!  have a delicate vanilla flavour thanks to the vanilla bean paste which goes well with a lot of toppings.  Today we had a melon and mango hanging around so paired the Vegan Vanilla Pancakes with a lovely lime & ginger melon salad! These Vegan Vanilla Pancakes use ground chia seeds as an egg replacer, I use a coffee grinder to blitz them into a powder and mix with the flour.  That way there is no crunchy seeds throwing off the soft, fluffy texture and no need to faff around making a flax egg (which I REALLY do not like!!) Vegan Vanilla Pancakes (soyfree)

The summer holidays are finally upon us which means lazy mornings and time to make something a bit more special for breakfast! These Vegan Blueberry Muffins are Dairyfree, Soyafree, Eggfree and full of fruity, oaty goodness to keep the Peachicks filled up & fuel all the paddling pool splashing! Alongside the oats and frozen blueberries, these muffins contain less than 3g of added sugar each even with the crunchy oaty topping. What’s not to love about Granola?  Its crunchy, a little bit sweet and full of loads and loads of nutritional good stuff! Shop bought Granolas are packed with added sugar, so I make my own, one 550g batch of granola has just 1tbsp of honey added to it.  And yes I am a massive supporter of the sugar tax.  The sugar is the glue that sticks everything together and makes those crunchy nugget bits, which means this granola has less nuggets in it but is still really crunchy.  A small bowl of this with some dairy free milk gets me through a morning of running around at work or more likely I sprinkle it over coconut yoghurt with some raw cashew nuts and pack it in a jar to eat as and when I can grab a mouthful! Tuesday 9th Feb is Pancake Day, the exact origins of which are (as with most things) up for debate between a Christian holiday or Pagan festival.  Either works for me to be fair and the Peachicks are not really that interested in why they get pancakes as long as they do!  I have played around with a plain egg-free, dairy-free pancake recipe for a while now and you can find an oat milk version with warm peaches here.   Plain Pancake Batter… (dairy free, egg free, soya free, nut free, seed free, gluten free) And here is another version of the recipe which you can make gluten free and use in the same way as a ‘normal’ pancake batter!  I use Doves Farm Gluten Free Flour as I find it is the most reliable for the price – I don’t use enough gluten free flours to know how this recipe […]

Vegan Apple & Raisin Pancakes! (dairyfree & eggfree)

A great grab & go breakfast or afternoon pick-me-up – either way these Vegan Museli Muffins are very delicious! I’m a big fan of food having a range of textures when you eat it and the soft muffins contrast really nicely with the crunchy museli topping; these little muffins are also packed full of energy courtesy of the grated dark chocolate, seeds and dried fruit (perfect for a morning den building, Gruffalo hunting and mark making with sticks in the woods!) They are also really good for lunchboxes and keep the Peachicks fuelled for the last few hours of school so they are only mildly ravenous when they get home. Makes 12 Muffins
