I give you Millie's Marvellous Minnestrone served with crunchy Parmesan crusted courgette wedges. Jar to table in no time at all, leaving time free for all that last minute homework the Peachicks suddenly remember needs to be done! Full of aubergines, mushrooms and a great way to use up all those left over tiny pasta bits; it also has added dairyfree milk so is a great way of getting vitamins as well as calcium into the little people! It is Vegan and easy to make Glutenfree too, just swap the pasta.

So when we were both feeling a bit too rubbish for the zoo this week we spent the afternoon whipping up this very yummy Vegan Lemon Drizzle Cake!  Its dairyfree, eggfree and has got the juice of 3 whole lemons in (and on) it. Lets be honest who doesn't love a good lemon cake? And this Vegan Lemon Drizzle Cake, smothered in zesty lemon icing is a perfect for all occasions! Just add a cuppa (or two)!

Can't decide between vanilla or chocolate cake? Why not have both with this Chocolate & Vanilla Vegan Marble Cake! Pretty, easy to make & sure to impress! All you need is a piping bag of each batter which you then Jackson Pollack into the tin and swirl together with a skewer or knife! Just fill with buttercream and/or jam plus some fresh fruit if you fancy it and you'll have a beautiful cake to share with friends. It definitely went down well when the Peachicks and I met up with some friends & their little people at the weekend!

Creamy Cheesy Vegan Potato & Kale Spring Salad, perfect way to banish those winter blues and full of immune boosting vitamins to keep the bugs away! This dish is freefrom most of the Top14 allergens as its freefrom dairy, eggs & soy as well as gluten (check cornichon ingredients) but noone will be able to tell the difference! This is a great stand alone salad that is delicious warm and even better cold the day after. It also makes a great side dish to your favourite grilled fish, meat or vegan alternative. The yoghurt dressing can be made in a big batch and kept for dunking veggies in for the rest of the week!

Light and fluffy, Vegan Cheese & Chive Scones. Dairyfree but full of flavour thanks to the vegan parmesan & fresh chives! Most people will be familiar with those sweet or fruit filled ones but have you ever tried a Savoury scone? Yum! These Vegan Cheese & Chive Scones are great with slow cooker stews or even better a nice hot bowl of my Creamy Vegan Butternut Squash Soup.

This Vegan Vanilla Victoria Sponge is super easy to make. It's also light and fluffy but sturdy enough to filled & covered in fondant for special occasions! This recipe makes one 20cm cake which you can slice into 2 or 3 ready for filling with jam & buttercream. You can also easily vary the flavour of this basic sponge recipe by using nut milks or adding coffee, chocolate or citrus zests! It is dairyfree, eggfree, nutfree and easy to adapt to Glutenfree, by replacing the flour with the same quantity of Doves farm glutenfree flour.

My Essential Vegan Christmas Cake Biscotti make very pretty edible presents. Christmas is a great time of year but with all those extra presents to sort out for the kids teachers, friends and other randoms, handmade gifts are an ever popular idea. My best advice is something that can be made in bulk, in advance and with extra ingredients that can be changed depending on what is in your cupboard! And here it is - my Essential Vegan Christmas Cake Biscotti Recipe, can be made in advance and kept in pretty cellophane bags ready to hand out (also makes lovely goodie bags!) These have all the flavours of Christmas Cake in a yummy, dunkable biscotti filled with cranberries, dark chocolate chunks and brazil nuts then topped with white chocolate drizzle and grated lemon zest!

Autumn is the season of beautiful fruits and this delicious Vegan Pear, Fig & Ginger Cake is the perfect way to serve up all those slightly over-ripe pears lurking in the fruit bowl! The warm hint of the fresh ginger works really well with the pears and figs without overpowering either of them. This cake is great served warm on a chilly Autumn afternoon with a generous scoop of dairyfree vanilla icecream! The best part of this cake is that it is quick to make, perfect for a last minute afternoon tea, as a lazy Sunday dessert or for warming up after a sunny stomp in the woods.  It would also make a great warming pudding after an evenings Trick or Treating or for a Fireworks Party!  It actually takes longer to grate or mash the pear to remove the skin than it does to mix the ingredients together […]
