The Easter holidays are finally upon us and I for one am feeling very organised.  All my work is done and so for the next 2 weeks I can relax and spend some time with The Peachicks.  Its going to be a good couple of weeks, not least because it is time for our annual family holiday to Cornwall! Eeee! I am so excited but there is a lot to do before we go, mostly baking, shopping and of course giving Roxy car a once over.  But before all that – today we had our traditional first day of the holidays chill out.  I wrote a few posts, including this one about choosing our allotment and the girls have spent the day watching tv, playing board games and helping me bake these very yummy Glutenfree Vegan Vanilla Almond Cookies!

These cookies are soft but crumbly, with a delicate almond flavour.  The Peachicks decided to give them a bit of a seasonal Easter twist by dunking them in Sweet Freedom Choc Shot Orange Spice!  Although they would be very yummy dunked in melted dark chocolate and left to set.  I admit I skipped the choc shot as we only have the orange version left which with my current run of luck with allergic reactions I didn’t risk.  I did however happily dunk these in my tea! (Decaff Waitrose own label if your interested!)

 

If you are new to Glutenfree cooking or just not a fan of glutenfree products I cannot recommend Vicki’s Flour enough.  FreeFrom Fairy Flour is so versatile you can literally use it for everything! A note about the dough… as the cookies are crumbly after baking, you have to leave the dough soft and a bit sticky.  The best way to handle it is to wet your hands slightly with cold water before rolling the dough into small balls and squashing flat.  I guess you could bake these straight away but as with most butter biscuit doughs they actually benefit from chilling for 30mins beforehand.  If you are making these for gifts or special occasions, you can roll the dough balls in sprinkles before chilling & baking – you will get some very pretty rainbow cookies!

This is a great little recipe, easy to make with the little people too!  We are going to make some for Easter gifts and decorate them by dunking in melted dairyfree chocolate and sprinkling with assorted decorations.  I think they will be particularly yummy dunked in dark chocolate and sprinkled with freeze dried raspberries!

Servings: 12 cookies

Ingredients
  • 50 g Dairyfree Margarine vitalite
  • 100 g FreefromFairy Plain Flour
  • 25 g Ground Almonds
  • 1/4 tsp Vanilla Extract
  • 30 g Icing Sugar
Instructions
  1. Cream butter, icing sugar and vanilla extract. Stir in plain flour and ground almonds and form into a soft dough.
  2. Wet your finger tips in cold water and roll teaspoons of the dough into 12 balls. 

  3. Set onto baking silicone sheet, squash into flat rounds and then chill for 20mins

  4. Preheat oven to 160C and bake on the middle shelf for 20mins.  Although keep an eye on them from 15mins onwards.
