There is one cake flavour that Elodie loves more than any other - its lemon. So when we were both feeling a bit too rubbish for the zoo this week we spent the afternoon whipping up this very yummy Vegan Lemon Drizzle Cake!  Its dairyfree, eggfree and has got the juice of 3 whole lemons in (and on) it. Lets be honest who doesn't love a good lemon cake? And this Vegan Lemon Drizzle Cake, smothered in zesty lemon icing is a perfect for all occasions! Just add a cuppa (or two)!

Vegan Lemon Drizzle Cake (Dairyfree, Eggfree)

Mother’s Day is fast approaching and these Raspberry & Lemon Scones would be perfect for any Afternoon Tea.  They are packed full of Rasberry Powder (see Nutriseed Review) and fresh lemon juice.  Being dairyfree and egg free they are suitable for almost everyone, we covered ours in Seedless Raspberry Jam, topped with leftover lemon buttercream  and sprinkled with lemon zest!  They would be equally amazing with jam and clotted cream if you are not avoiding dairy.  The raspberry powder gives the scone dough a slight purple/grey tinge that cooks out in the oven leaving a delicate raspberry flavour.  I only used a tablespoon of raspberry powder but I think I could have added another!   Scones are so easy to make, no matter whether they are dairy free or not they are light and fluffy!  The flavour combinations you can make are endless; juices and syrups are one way […]

  There is only so much melon you can eat for breakfast before you start to wonder if there is another more exciting way to serve it.  Pinterest to the rescue – what should I spy but a pin for ‘watermelon pizza’, a quick search revealed that apparently people had topped their pizzas with all sorts of toppings!  (Although this is more for my benefit than the Peachicks who would just eat melon slices everyday!)  In the last veggie box we got some very lovely nectarines and passionfruit which are just ripe now, I added seeds to this but actually I don’t think they are really necessary (so i left them out the recipe) – the fruits on their own were really  lovely! Saturday Breakfast – Melon Pizza

Nothing says summer like fresh berries and I happen to have in my fridge right now some lovely fresh homegrown redcurrants (courtesy of Grump’s PYO!) – well OK the slightly squished  sticky ones that were left after the Peachicks’ demolished the rest!   But that is the great thing about cakes, you can use up all the berries that were somewhat over enthusiastically picked, either in the batter or, as in this case, in the cream for the filling.
