#RecipeRefurb Challenge 2 – Chewy Apple & Sultana Flapjacks (Dairyfree, Vegan)

These Chewy Apple & Sultana Flapjacks are a firm family favourite.  Dairyfree and perfect for picnics, lunchboxes or just an afternoon pick me up with a cup of tea!  They are just as good with tinned apples or fresh, whatever you have lying around!

 

It’s been a while since the first #RecipeRefurb Challenge, where I updated one of most visited recipes on the Peachicks’ Bakery – Slow Cooked Rosemary & Garlic Lamb Breast.  The Peachicks and I have been enjoying some quality time together over the Easter holidays AND you may have noticed a few posts about our new allotment too!  The #RecipeRefurb Challenge is an idea sprung from a conservation between me & some other food bloggers about giving some old posts some love. AND from my point of view updating either the (often horrible) photos or ingredients to reflect changes in our allergy requirements! This time it’s the turn of these Apple & Sultana Flapjacks… here is the before and after photos!

Flapjacks are a great favourite around here.  Although the debate over whether they are a cake or a biscuit is still raging in this house, we all agree how yummy they are!  And whilst I am not sure they are the healthiest snack, they are a great source of energy for a Peachick when you are marching them around the New Forest, recreating Elsa’s Ice Palace on the beach or putting them to work on the allotment!  They do have a load of sugar in them (before you even count in the granulated sugar), thanks to the apple, sultanas, golden syrup and oats but with a few swaps (stevia, sweeteners, sweet freedom) you could reduce at least some of it!

This is a basic recipe with which you can tinker as much as you want.  For added nutrition nuts and seeds are great, although obviously not for school lunchboxes or for those with nut allergies.  A small amount of cocoa powder or coffee is nice for a more grown up flapjack or for those with a sweet tooth a rocky road version is always a winner!  Personally, my favourite is adding cocoa powder and replacing the sultanas and apples with glace cherries… definitely a must try!

I have altered the recipe as the original Apple & Sultana Flapjacks are full of tinned apple.  Being that we are currently in the middle of the Cornish countryside and we only have fresh apples, that is what these were made with!  The sultanas can be replaced by mixed fruit but as this usually has orange peel in we steer well clear of it!

Recipe for Chewy Apple & Sultana Flapjacks:

Chewy Apple & Sultana Flapjacks (Vegan & Dairyfree)

Whether you class them as a cake or a biscuit - everyone agrees flapjacks are delicious! They are easy to make and have few ingredients.  Brilliant for lunchboxes and perfect for picnics or afternoon pick-me-ups with tea! These Chewy Apple & Sultana Flapjacks are packed full of fruit without being too sweet.  They are also great with added ginger or cinnamon powder for extra spice or seeds for an extra nutritious snack!

Course: Afternoon Tea, Lunchboxes, Picnics
Servings: 24 small flapjacks

Ingredients
  • 100 g Dairyfree margarine (vitalite, pure)
  • 50 ml Vegetable Oil
  • 50 g Golden Syrup
  • 150 g Sugar
  • 1 Apple (or half a tin of apple pieces) (cut into chunks)
  • 120 g Sultanas
  • 500 g Porridge Oats
Instructions
  1. Preheat oven to 180 C and prepare the pan that you are using with a light spray of cooking spray or lining with silicone baking sheet.

    This recipe will fill a rectangular tray bake pan - I use two 7inch square silicon ones because they need greasing. Also if I make two batches I find I am more likely to have some leftover for lunchboxes!

  2. Into a large saucepan, weigh out the dairyfree margarine, oil, sugar and golden syrup.  Gently heat until the sugar has melted.

  3. Add the oats, sultanas and chopped apple, to the saucepan of melted, syrupy ingredients. Stir until the dry ingredients are combined and coated. 

  4. Spread out into the baking tin and press down firmly, making sure it reaches the corners.

  5. Bake at 180 C for 20-25mins until golden brown. 

     (The flapjacks will looked undercooked – DO NOT panic they will firm up as they cool in the tin)

  6. Cut into portions and leave in the tins to cool completely or as long as you can wait (still just warm in this house!)

  • Oooh yum – love the sound of these. Always a sucker for flapjack and these ones have such fab flavours. Also loving how much better your new photos are. I know I need to got through and update my photos. The early days ones are soooooo bad. But it is such a big job – aaaaargh. I can’t decide whether to do it in dribs and drabs or just take a couple of months off blogging new recipes and do it all in one hit!! Either way it’s going to be painful but is necessary!!

    • They definitely don’t last long around here after school! I try and keep the sugar down in the everyday ones otherwise the kids are high until bedtime! x

  • We love flapjack. Well, the kids love Grandma’s flapjack more as she drowns it in golden syrup!! Not quite as healthy but it is good!

  • Funny, I’ve never really thought of flapjack being a cake or a biscuit! More of a thing in it’s own right – I guess if I had to choose one, I’d say biscuit…you wouldn’t have a wedding flapjack or a birthday flapjack, but you might just dunk one in your tea!! 😀 Whatever they are, they look very nice to me and sooooo much more enticing than the original photos!!     • Neither had I until I was writing this – Its weird isn’t it but I think your right its not a cake really when you look at it like that! Mind you I know a few who would love a birthday flapjack! LOL! I was really pleased with the new photos – the old ones were def very cringeworthy! Oooh exciting looking forward to seeing your updated recipes! x
