Fancy seeing you lot here again!
(& A big Peachick welcome to those of you who are visiting for the first time!)
Hopefully everyone is doing ok & staying safe in the midst of lockdown. We are starting to go a little stir crazy so have definitely been very grateful for the Lottie, all the lovely green spaces & sea that we have within a few miles of us.

The Peas have been struggling since January when part of their lockdown safety net disappeared but thankfully have had school & gym to take their mind off everything. It has hit Millie particularly hard, so she is now at school most days. Honestly, we cannot fault their schools at all, they have gone the extra mile to support the kids however they need it. Alys has a full timetable of lessons & Elodie has core subjects in the mornings then occupies herself with gym in the afternoon. But despite working hard, they have made sure they get some good quality downtime in as well…

There are still zoom gym sessions to do and both Millie & Elodie have been working hard to keep up their conditioning & flexibility ready to go back to gym. Whenever that may be!
Elodie’s club are doing a lockdown Olympics & she did really well in the first round, coming 3rd in her squad & 9th overall out of all the artistic gymnasts. She was definitely, very pleased with her medal that came through the post – especially as it matches her hair LOL!

Updating The Peachick’s Bakery
For me, its definitely been a very different experience this time as I am furloughed from my main job. I’m trying to concentrate on the website as its slowly but surely starting to bring in a tiny bit of income. This is mostly from ads as well as Vegan Kind affiliate links within recipes (have a look at the sidebar on every page to find out more!) And while it’ll never make enough to retire on, every penny makes a huge difference at the moment.
As well as doing some essential website housekeeping, I am also trying drag some of my older posts up to date with lovely new photos and so a lot of the really awful ones have been set to draft until I do!

Easy Vegan Blueberry Muffins
By request (demand/plea) I had to start updating posts with this classic blueberry muffin recipe – the original photos were just hideous. And not in ‘they weren’t too bad but just could be better’ they were proper horrible! This is such an easy recipe and great for breakfasts, also work really nicely with gluten free flour.

Vegan Carrot Traybake with Lemon Cheesecake Frosting
I posted this recipe for my birthday a couple of weeks ago and it was SO good, I’ve had to make it a few times since!
This Easy Vegan Carrot Cake Traybake, filled with juicy sultanas & crunchy sunflower seeds, is smothered with pillows of decadent, dairy free Lemon Cheesecake Frosting. So simple to make but sure to impress! Sturdy enough to be stacked, filled & covered with fondant for something different on that special occasion.

Easy Vegan Shortbread
Who doesn’t love a bit of shortbread? This is the newest recipe on my site and if things go well there should be a very grown up version of a Millionaire’s shortbread live at some point in the next 24hours!
Easy Vegan Shortbread biscuits, the perfect treat to enjoy with a cup of tea. This rich, buttery shortbread is made with just 3 ingredients and a great first recipe to bake with kids.

Brilliant Breakfasts CookBlogShare Round-Up
Although there was so many amazing recipes linked up last week, and the theme could’ve been a million different things, it was those lovely breakfast recipes that caught my eye!
I’ll be honest, its been really hard to get out of bed some days recently. And the longer lockdown goes on with no end in sight, the harder it gets. Everyone else in this house has some purpose to their days. Mine involves desperately trying to get Elodie to concentrate on school work and to be honest I think its probably easier to pin water to the wall! If its not gym, she’s just not bothered!

And while I can’t really complain because we are all safe & healthy, there aren’t many inspiring reasons to get up at the moment! To help, I’ve been making an effort to give everyone a nice breakfast as a little treat to start the day with.
And these Four Brilliant Breakfast recipes, courtesy of those very talented Cook Blog Share bloggers, are definitely worth getting out of bed for!

Warming Breakfast drinks
Oatmeal Atole from Maricruz Avalos looks perfect as something different for my porridge loving Pea to have on cold mornings. Millie is not a morning person and it takes something special to drag her from her cosy marshmallow bed! I reckon this lovely cinnamon spiced drink would be just the ticket!

Oaty Breakfast
Oats are a great choice for breakfast and definitely popular with everyone in this house that can eat them (I mean 3 out of 5 isn’t bad) and aside from porridge with a dollop of vegan chocolate spread, granola is a favourite. Some recipes have quite a lot of sugar but this Banana & Cashew Granola from Mummy Lauretta uses mashed banana as part of the sticky stuff for this lovely granola. And if you needed anymore reasons to check it out, it is packed with cashews & flaxseed.
YUM!
Definitely worth getting out of bed for. (Although to be honest, you might find me nibbling on this all day!)

Wonderful Waffles
I really need to invest in a waffle maker, I see all these lovely recipes for waffles around and I REALLY want to give them a go! And these Pumpkin Spice Quinoa Waffles from Melissa Traub are no exception. I eagerly await the arrival of pumpkin spice lattes in the Autumn and I always need new recipes for quinoa so these waffles sound amazing!

Perfect Pancakes
Pancakes are just the best breakfast, with so many variations around the world. You can stack them (American Style Vegan Vanilla Pancakes), fill them (Mini Apple Ring Pancakes), roll them, stuff them. Have them for breakfast, sweet for dessert or even savoury as a quick lunch. You can even make them thin or make them fat & fluffy. Its entirely up to you. With so many choices, its not surprising that everyone likes their pancakes a certain way.
These beautiful 3 Ingredient Vegan & Gluten Free Pancakes from Rebecca at Glutarama look like absolutely perfect crepes but without any of the dairy, eggs or gluten!

Non-Vegan Breakfast
Whilst no-one in this house can eat eggs & some of us can’t eat rice either, Kedgeree is a great choice for breakfast. This Easy Smoked Mackerel Kedgeree from Farmer’s Girl Kitchen would be a great protein packed breakfast full of all the essential vitamins packed inside eggs.

Awww thank you, they have their moments but we are very lucky!
Tough times indeed, especially for parents with kids at home. But good to hear you’ve a bit more time to spend on your blog. I’ve been wading through my backlog for the last two years and only have another 300 posts to update. In theory anyway. In practice, most of the ones I’ve done over the last 18 months, all need updating again!
Anyway, I love a brilliant breakfast, so a nice choice to start off February. Good luck.
