The debate of whether its spelt Doughnuts or Donuts may divide opinion* but trust me, everyone will definitely agree that these FreeFrom Glazed Ring Doughnuts are an absolute treat.  They are also surprisingly easy to make, whether you bake or fry them, have less sugar than a regular doughnut (depending on who you let glaze them) AND are completely FreeFrom the top14 allergens.  The only real decision (aside from who you share them with) is how big to make them!  This recipe makes 8-14 doughnuts using a 7cm or 5cm round cutter for the doughnut and 2.5cm one for the hole.  If you re-roll the holes then you would get a couple more, but lets face it who can resist those cute little treats?

Ok, Confession time… Not only have I never made doughnuts before but I’m not a great fan of eating them either!  However, thanks to my lovely friend ‘Skippers’ I made 40 last weekend.

No, thats not a typo.

I made 40 doughnuts. Some filled with Jam, others stuffed with a chocolate custard and then these glazed Ring Doughnuts.

In one weekend!

And not just any doughnuts, nope they were Dairyfree, Eggfree, Glutenfree & suitable for Vegans. In fact they were ALL freefrom all Top14 allergens – Not bad for a first attempt!

I’ve got a funny feeling that these will not be the last batch I will make and that there is a lot of room for more flavour experimenting.  Elodie has her sights firmly set on a swirly unicorn glaze while Millie has already requested that her next birthday cake be covered with doughnuts of every size & flavour!  Me, I am thinking that an apple filled, cinnamon sugar coated version would be amazing or maybe a mango & lime cheesecake filling…. What about you?!

Personally I am not sure I really know. Do you go for baked with the soft crust and delicate cake like texture or the fried with its crispy, chewy golden shell and fluffy middle?  Both are as delicious as the other, you could argue the baked ones are ever so slightly healthier but then memories of Hubby & I eating warm cinnamon doughnut holes squished together in the crowd watching the Winchester Fireworks make the fried version so tempting.  Either way, you can’t go wrong with a nice frothy coffee to go with them! And they definitely went down well while we were tucked up in the allotment shed during a mini snow storm!

Course: Sweet Treats
Servings: 8 7cm doughnuts

Ingredients
  • 150 ml Dairyfree Milk (Koko)
  • 50 g Sugar Can be as little as 2tbsp
  • 50 g dairyfree margarine
  • 1 tbsp golden syrup
  • 1 tbsp Vegetable Oil
  • 1/2 tsp Dried Yeast
  • 250 g Glutenfree Bread Flour Plain Flour
  • Extra flour for dusting
For the Glaze
  • 100 g Icing Sugar
  • 1 tbsp Dairyfree Milk
  • Food Colourings
Other Bits & Bobs
  • 1 litre vegetable oil for frying +pinch of salt
  • Heavy Cast Iron Pot
  • 1 inch round cutter holes
  • 3 inch round cutter doughnut
Instructions
  1. In a small saucepan, gently heat the dairyfree milk, sugar, dairyfree margarine and golden syrup in a pan until all melted together. Add a tablespoon of vegetable oil and set aside until cooled.

  2. Once cooled, sprinkle the yeast over the top and leave on the side for 15minutes until it is frothy.

  3. In a large mixing bowl, weigh out the glutenfree flour.  Make a well in the centre and pour in the milk mixture.  Bring together gently and pour out the dough onto a floured surface.  The dough will be soft and sticky but not runny.  

  4. With floured hands squash the dough gently until two inches thick.  Generously flour the cutters and cut out the doughnuts & use the small one to make the holes.

  5. Lay the doughnuts out on silicone sheet or floured surface and leave to rise while the oven or oil heat.

To Bake.
  1. Preheat oven to 170C.  Arrange the doughnuts on a silicone baking sheet and bake for 18-20minutes.

To Fry.
  1. Heat the oil over a gentle heat until it reaches around 150C.  The doughnuts should have a raft of small bubbles around them and gently fry for a few minutes on each side.  You don't want them to colour too quickly because they will be raw in the middle but if the oil isn't hot enough the doughnuts will be greasy. 

  2. Drain on kitchen paper and once cooled slightly dip in the bowl of glaze.  Place on a rack, sprinkle with edible glitter and leave to set.

Recipe Notes

 

The doughnut holes are best fried and will take around a minute on each side.  They can either be tumbled in a pile of sugar or dipped in glaze.  Either way these make a really cute mini treat for the little people!
