You may have noticed I’ve been a little bit quiet lately. The Peachicks’ Bakery has been a little light on new recipes for a while. Why? Because, over the Easter Holidays, The Peachicks & I had two, whole, interrupted weeks of well nothing really! The weather wasn’t great but we managed to potter around up at No17 a little bit but aside from that, a couple of zoo trips (Monkey World & Marwell) and lots and lots of snuggles on the sofa we did NOTHING! It was lovely! Just me & my Peachicks!
Don’t get me wrong there was A LOT of cake baked & consumed, including The Peachicks’ Ultimate Chocolate Cake, but no NEW recipes.
Just a lot of old favourites!
I have to admit I was stuck in a culinary baking rut.
And then this Coffee & Blueberry Loaf happened. I had been asked to bake some cakes for a charity cake sale for the Sole Sisters vs The Isle of Wight; two very lovely local Mummies are walking 106km non-stop around the Isle of Wight (5th/6th May 2018) to raise vital funds for The Murray Parrish Trust’s #2millionsteps appeal. This appeal aims to raise £2 million for a brand new Children’s Emergency & Trauma Department (A&E) in Southampton. It is going to be an amazing resource, and although somewhere we hope we never have to visit, between The Peachicks gymnastics aspirations, mulitple allergies, asthma and general all-round clumsiness you never know! The department will cover the whole of the South of England and the Channel Islands so we are very lucky to have it right on our doorstep.
Last year it was cupcakes for Elodie’s YDK Ginormous Teddy Bears Picnic*, this year…. chocolate? lemon? good old victoria sponge?
When I don’t really know what to make, I tend to wander aimlessly around the shop looking for inspiration. At 7am, in Sainsburys, while I was hugging a much needed takeaway coffee, the blueberries looked really lovely so I grabbed some and a few other ingredients and went off to work. At some point along the m27 I remembered a really REALLY yummy coffee & blueberry cake I’d had in Toronto… and I knew had a couple of coffee frosting tubs kicking around in cupboard…. So decision made!
It looked so lovely I made another one the day after for my Nanny’s birthday. And honestly it did not disappoint! This time I pushed the layer of blueberries down into the sponge and it formed this beautiful jammy layer. If you are not a fan of coffee buttercream or for a slightly, lighter version then leave the blueberries on the top of the batter and sprinkle over brown sugar oaty crumble before baking. Like all glutenfree cakes, this one is best served slightly warm and definitely the same day you make it!
At home, the Summer Term has started so its back to work & school for me & The Peas. After a lot of work, No17 is starting to look like an allotment again and hubby has flattened space for his greenhouse to go in. The asparagus is once again amazing and last year’s kale & chard continue to feed us while we wait for everything else to grow! I’m just off to start a catch up post!

A is starting her final term at Primary School, leaving me just a few months to get my head around having a Secondary School starter in the house! She might be more than ready, but this mummy is definitely not! Ironically it is not managing her allergies and asthma that worries me, I know she has that sorted. Its the routine and emphasis on being independent in remembering it that worries me. She has inherited my sense of direction and need for lists to remember the simplest things. I’m just hoping there is some help for her when she starts!
Mills has started dancing and LOVES it! Its so nice to see her finally confident enough to try things, we will gloss over the choir catastrophe. She has been desperately trying to teach the others the routine she is learning, but A is not the most coordinated and if its not Gym, E isn’t interested! Speaking of my Millie in the Middle, its her birthday this week and I literally cannot wait to give my entomologist/paleontologist to be her present! But then I am not sure the present was just for her!
And then there is The Ginger Peachick. The Commonwealth Games have done nothing to dampen her resolve to be an artistic gymnast. I worry 5 is too soon to be quite so determined and focused but it seems to be a good channel for all her energy! She loves the technical side of it too and we’ve been trying out the Head over Heels Gymnastics books and dvds. The full review is coming soon but needless to say she is BIG fan of them!

Recipe for Glutenfree Vegan Coffee & Blueberry Loaf:
Glutenfree Vegan Coffee & Blueberry Loaf
- 100 g Vegetable Oil (Sunflower, Canola, Vegetable)
- 100 g Granulated sugar
- 2 tbsp Golden Syrup
- 1 tsp Instant Coffee or Espresso Powder
- 75 ml Hot Water
- 125 ml Dairy Free, Milk Alternative (Koko, Oatly)
- 250 g Gluten Free Self Raising Flour
- 1 tsp Ground Chia Seeds (or flax seeds)
- 150 g Blueberries
- 1 quantity Coffee Buttercream
- Grease and line a loaf tin. Preheat the oven to 170C.
- Into a mixing bowl, weigh the vegetable oil, sugar, golden syrup and instant coffee. Pour in the boiling water and dairyfree milk and whisk until the sugar has dissolved.
- Sift the flour and ground chia seeds into the mixing bowl. Fold the flour into the sugar mixture, gently fold through 50g of the blueberries. Pour the batter into a loaf tin and bake for 35minutes.
- Leave to cool, spread over a layer of coffee buttercream and the rest of the blueberries.
- Best served the same day with a nice hot cuppa!
