I love having time to make a curry, cooking it low and slow all morning and this beautiful Mushroom & Lentil Coconut Curry is always polished off by The Peachicks. This glutenfree, vegan family favourite is packed full of protein, Baby button mushrooms and chunks of seasonal veggies, in a fragrant creamy coconut sauce. Best of all you’d never know there is lentils in it because they just disappear, leaving behind a naturally thickened curry. Made from a few simple, cheap ingredients it’s the ultimate freefrom on a budget dinner. You can also add chicken or grilled garlic prawns for a non veggie option. Served with rice, flatbreads & onion salad for a curry night to rival any takeaway.

Then look no further because July is #FreefromBBQs month and here is my beautiful contribution… #FreeFromBBQs: BBQ Apricot & Nectarine ‘Steak’ Salad.  The ‘steak’ in this case being lightly charred stone fruits, delicately flavoured with Lemon Thyme from No17.  The texture of the fruit ‘steaks’ makes them a great meat alternative and no soy or mushrooms in sight! It is perfect for any summer get together with friends or family as it is Eggfree, Glutenfree and soyfree.  This would also make a delicious centrepiece to a vegan BBQ spread, by swapping the Feta for soyfree, vegan cheese!
