Fruity Vegan Mincemeat with Cranberry & Persimmon. Beautifully simple, homemade vegan mincemeat delicately flavoured with delicious Persimmons. Store cupboard ingredients to show stopping Vegan Mince Pies in a couple of hours using ready made pastry or about half hour if you make the mincemeat ahead of time. Completely dairy, egg free & suitable for vegans as well as nut free too!
Clean & Sterilize glass jars (wash in a dishwasher) and leave to dry while you make the mincemeat.
Weigh all the ingredients into a large heavy saucepan and stir to mix together. I find it easier to weigh the liquids as it will keep your ingredients in the same ratios even if your scales are a little old and bashed about like mine :)
Bring to the boil. Lower the heat and simmer for 15-20minutes until the mincemeat starts to thicken.
Pour into the jars and fill to the top. Put on the lid and leave to cool. Add a pretty ribbon for gifts or keep in the fridge until you want to make a Christmas Cake or batch mince pies.
